Update:  My Kraut didn’t have water coming over the top like I think it should have so I just dissolved some kosher salt in water to make some “brine”…I poured it over the top.  Also, I decided to put the plate  (board) on top of the Kraut, then the weight (jar of water) and then the towel. I read somewhere that if the kraut is too salty, you can rinse it before you can/cook it/eat it.—If  you have any questions, please feel free to comment here.

Have you ever made Sauerkraut?

We have but it was several years ago. It turned out really good and we canned several pints. I made more today…this is how I did it.  We have 2 crocks, a 5 gal one and a 3 gal one.

First, my DH (Dear Husband) planted cabbages, but you can buy them at the store…they may be at the Farmer’s market this time of year. He let them grow and grow…here is what he picked…

(In the blog I mentioned earlier…she said to let the cabbage sit for three days after you pick it, otherwise it will have too much water…well, I had hardly ANY water…so I will continue to use it on the day it’s picked).

Then we pulled the outer leaves (looks like grocery store cabbage now!)

Then we started cutting into thin strips…layering and salting…oh yeah, you need to “smash” each layer, I used a potato smasher.

When you are about 3-5″ from the top of the crock, salt and smash. Then you lay a Kitchen towel or some kind of cloth over it, then a plate (we bought a board with the crock) to keep it smashed and a jar of water (weight)or a rock or something to keep it under what water will be bubbling up.(See update..I changed the orderof plate, weight, cloth).

Check it every couple of days to make sure it isn’t bubbling over the top and if it has “scum” on it, just skim it off…IT’S STILL GOOD!!  Change to a clean towel if you need to.

Put in a dry, cool, dark place. They say to let ferment for a week to a month….depending on how crunchy, less stong (smaller amount of time)to softer, stronger taste, (longer amount of time)

I will post again when I can it in a few weeks. I plan to use some 1/2 pint jars for a quick sandwich or hot dog…pint jars for sauerkraut and weenies…

WOW

Well, I guess you thought I’d never post again…and to be honest, I thought I may never again…but I made a cake the other day for LM’s b-day and would like to tell you how EASY and GOOD it was! Not to mention a BIG hit with the kids AND the ADULTS!  (We fed 7 kids and 13 adults and had a few pieces left over).

ICE CREAM SANDWICH CAKE

23-24 Ice Cream sandwiches  (original, neopolitan or chocolate)

TIP: Buy a few extra in case your husband decides to eat 4-5 the night before….

2-8 oz) OR 1-16 OZ Cool Whip

Hot Fudge Topping (Caramel, strawberry…) I used about 1/2 jar.

Mini M&M’s  (or ANY topping–butterfingers, heath, oreos, Sprinkles…it’s endless!) I used about 1/2 lg bag.

Directions:

Put FOIL on bottom of 9 X 13 pan…be sure to put it up on the sides so you can get the cake out easily.

Let  IC sand set out a few minutes and lay side by side…kind of “squish” them together.

Spread Hot Fudge topping, (YOUR choice of thickness) and 1/2 Cool Whip.

Layer the same again ending with hot fudge.

Freeze for 1 hour

Take out of pan and put onto a flat pan or bottom of cookie sheet.

Sprinkle M&M’s on top.   You can use ANY candies or SPRINKLES

I also put candles on at this time.

Freeze 2 more hours.

Cut with serated knife.

Smoothies

Yes, I made smoothies on the coldest day of the season.

We never got above freezing today. 

Why do I make smoothies on cold days? 

My guys like them and we always have them in the freezer.

I just have a few thoughts that are running through my brain.

Why do public restrooms have hooks for your purse/coat in the stall but not by the sink and towels?

Why don’t businesses have their phone numbers on their signs? I would like to call sometimes to see if they have something before I go in.

Why do I use alot of …………. and !!!  and ????  Does that mean I’m demonstrative???

And WHY can’t I use “alot” instead of “a lot”?

Why do my dogs bark in the middle of the night? (I know they are trying to protect me, but nothing has gotten me YET).

Why does my son feel the need to argue with everything I tell him…thinking HIS way is better?  I have a lot more experience than he does and I KNOW better.

Why is Michelle Obama on vacation with secret service men and her 21 assistants??  IT costs the U.S. about $300,000  A DAY for her to do this….I thought we were trying to save money.

Why are WE supposed to be saving money and they (the govt.) can BLOW it.  I can’t be in debt without getting into trouble….why can THEY???

The people in Wisconsin….would they rather be fired than lose some of their benefits??  Would they rather SOME ELSE be fired?? 

I just don’t get it!!

Me and 4 of my High School friends  have decided to get together to have a “slumber party” in a few weeks. We are staying in a hotel in the City. A 2-bedroom suite with 2 bathrooms, 2 Bedrooms and 3 TV’s.  Won’t THAT be fun???  We have 5 attending.  We invited 8 but 3 can’t make it…that makes us sad, but we will still have a great time!!

I started getting stuff ready to do my taxes yesterday…ugh.  It took me all day just to make out our business expense report.  I am very organized throughout the year and am so thankful I am or it would have taken me alot longer!!  I just wish I would do a little at a time during the year…..

I told DH that I was glad I was as organized as I am and he said, “Yes, you are a good bookkeeper, but not so good at cleaning out the fridge”.   😦  

My Bonus daughter has cleaned out my fridge before….she LIKES to do it! 

Hey, don’t get me wrong, I DO NOT have things growing in there….and it does NOT stink!!

Quick Topic Change…..

Our oldest granddaughter turned 15yesterday!! I cannot believe it.  She is 5 years older than LM and we used to take care of her alot.  After we had LM it became more difficult for us to keep her…since she also had a baby brother LM’s age. But I remember so many times we would keep her and she was so much fun…I was 38 when I had LM, and did not think I would have children before that so she was kind of helping my “motherly” instincts to be put to rest. It is sad that she doesn’t remember all of our good times.  She is a really smart, sweet girl…I’d like to think we had something to do with that.

Okay….that’s all for today. I know it’s been awhile, but I get “writer’s block” I think.  That and the fact that I have not had very many comments since the giveaway……..;)

Other things….Have you ever roasted Pecans, Almonds or Peanuts?? We east them as snacks…LM doesn’t eat many vegetables, so he eats nuts and fruit with almost every meal.

Just put them on a cookie sheet and bake @ 350º for about 10-15 minutes. Until they get a golden color.

 Shake the pan a little to stir them up a little halfway through bake time.   I spray a little olive oil and sprinkle a little salt on the peanuts before cooking.
